Coffee roasting is a delicate process that can be considered both art and science. At Mad World Coffee, we understand that simply putting green coffee into a machine and turning it brown is not enough. The methods used to process the coffee, whether it is washed, natural, or honey processed, as well as the density and moisture, can all have an impact on the final roast profile.
What is a Coffee Roasting Profile?
A coffee roasting profile is a graph that displays the temperature of the coffee over time. We use Cropster, a software that takes data from the temperature probe inside the roaster and turns it into a graph. This graph shows the time and temperature of the roast, as well as any changes in burner and air settings.
Why is Each Coffee Unique?
Every coffee bean is unique, and therefore requires its own specific roast profile. For example, a washed Ethiopian coffee may have dried apricot and oolong tea notes, and in order to bring out those flavors, it needs to be roasted along a specific time and temperature graph. Once we’ve done the research and development on the coffee, we can then use that profile to recreate the same taste in the future.
The Process of Coffee Roasting at Mad World Coffee
At Mad World Coffee, we take a scientific approach to roasting, using data and technology to achieve a consistent and flavorful coffee. We aim to obtain a steadily declining ROR (Rate of Rise) to produce fully developed, flavorful, and sweet coffee. We also believe that sugar browning is crucial to our style of roasting and we strive to provide sweet-tasting coffees.
On roast days, we begin by weighing out the green coffee in the morning to cover our current orders. We like to roast our darkest coffees first to achieve a thermally stable roaster. Using uniform batch sizes allows us to be more consistent, as we sometimes roast the same coffee over many months.

Each coffee requires a slightly different profile to maximize its natural flavors. We use a combination of gas and temperature adjustments to achieve the desired profile. Our goal is to produce a coffee full of rich and complex flavors that is both ethically and environmentally responsible.
